Preheat oven to 350 degrees.

1. Chop up a handful of parsley, 3-5 green onions, and 7 cloves of garlic, 2 large sprigs of fresh thyme, 2 large sprigs of fresh oregano, and about 2 inches of fresh rosemary.

2. Mix in 1/2 pound of ground beef, 1/2 a pound ofground pork, and 1/4 pound of ground lamb until all the ingredients are evenly distributed.

3. Form the meat mixture into a nest and crack one egg into it. Sprinkle the whole thing with about 5 pinches of sea salt, and a good amount of pepper.

4. Mix the egg into the meat. When it is fully integrated, add a can of tomato paste and mix that in.

5. When the mixture is nice and even form it into a ball and put the loaf into a quart-sized pyrex container. Cover with aluminum foil, place on top of a pan or oven-safe tray in the oven and let it bake for an hour and 15 minutes. Remove from oven and let it cool for 5 minutes or so. Be sure to pour the juice over the loaf when you serve it, it’s incredibly delicious.
